    8-inch pie shell, unbaked
    3 eggs
    1 large orange
    3/4 cup sugar
    1/2 cup water
    2 tbsp. flour
    2 tbsp. margarine, melted
    1/8 tsp. salt
    1/2 cup shredded coconut

    Recipe



    Separate one of the eggs. Place egg white in the pie shell and tilt the shell to allow the white to completely coat the shell. Pour white out into a medium bowl. Add yolk and remaining eggs and beat well. Add sugar, water, flour, margarine and salt. Beat until smooth. Grate 1 teaspoon peel from the orange and add to the egg mixture. Set aside. Peel orange and cut into thin slices, removing seeds. Arrange the orange slices in the pie shell, sprinkle with the coconut, and pour in the egg mixture. Bake at 400 degrees for 35 minutes, or until puffed and browned and a knife inserted in the center comes out clean. Cool on a rack. Refrigerate. Serves 6 to 8.
