Pineapple Refrigerator Cake

1/2 lb vanilla wafers, rolled fine
1/2 c butter or margarine
1 c powdered sugar
2 eggs, separated
1 c crushed pineapple
1/2 c chopped nuts
10 maraschino cherries, cut up
1 c whipping cream


Recipe



Put all but 1/2 cup vanilla wafer crumbs in buttered 8-inch square glass baking dish. Cream together the butter and sugar, add 2 egg yolks well beaten. Mix together the crushed pineapple drained well, chopped nuts and maraschino cherries which have been cut up. Add to the butter, sugar and egg yolk mixture. Fold in stiffly beaten egg whites, and then gently fold in whipped cream. Put into the dish with the vanilla wafer crumbs and top with the remaining 1/2 cup crumbs. Cut into squares and serve with whipped cream and a cherry on top.

Serves 8 - 12.
