Cake:
1/2 stick butter
6 eggs, separated
1 cup sugar
1 teaspoon orange rind
1 teaspoon vanilla extract
1 cup all-purpose flour
1 tablespoon baking powder
Syrup:
1 cup orange juice
1 cup water
1 cup sugar
Recipe
Heat oven to 350 degrees. Butter an 8- by 12-inch pan with 1/2 stick melted butter.
Make syrup first: combine orange juice, water and sugar in a saucepan. Bring to a boil; reduce heat and simmer about 20 minutes. Remove from heat; allow to cool.
Meanwhile, separate eggs. Beat egg whites until stiff with an electric mixer; set aside. Rinse off beaters.
In a large bowl, beat egg yolks until light yellow. To the yolks, add sugar, orange rind and vanilla; cream well.
In separate bowl, mix flour and baking powder together; set aside.
Gradually add egg whites, alternating with 2 tablespoons of flour mixture, to egg yolk mixture. End with egg whites. Pour batter into prepared pan. Bake 35 minutes or until toothpick comes out clean.
Remove cake from oven; cut into diamond shapes. Pour cold syrup over hot cake. Let cool completely.
Yields 15 servings.
