    1 vanilla cookie pie crust
    1 egg white, slightly beater
    1/4 cup margarine, melted
    1 cup firmly packed light brown sugar
    3/4 cup all-purpose flour
    1 teaspoon baking powder
    1 egg
    1 teaspoon vanilla extract
    1 cup pecans, coarsely chopped, divided
    Prepared whipped topping

    Brush pie crust with egg white. Bake at 375 F for 5 minutes; set aside.

    In medium bowl, with electric mixer at low speed, beat margarine and brown sugar until blended. Mix in flour, baking powder, egg and vanilla until well combined. Stir in 3/4 cup pecans. Spread in prepared crust; sprinkle top with remaining 1/4 cup pecans. Bake at 350 F for 25 to 30 minutes or until lightly browned and filling is set. Cool completely on wire rack. Garnish with whipped topping.

    Serves 6
