    Simply Great Pineapple Cake

    1 box yellow or lemon cake mix with pudding in the mix
    3/4 cup vegetable oil
    4 eggs, unbeaten
    1 (11-ounce) can mandarin oranges with juice

    Recipe



    Mix ingredients in order given. Blend; beat with electric mixer, medium speed, for 2 minutes. Bake in 3 (8-inch) layer pans or 9 x 13-inch pan, greased and floured, at 325° for 25-40 minutes. When cool, spread with the following icing.

    ICING:
    1 (13 1/2-ounce) can crushed pineapple
    1 (3 1/2-ounce) package dry instant vanilla pudding mix
    1 (12-ounce) container whipped topping
    Dash of salt

    Mix crushed pineapple and instant pudding. Fold in topping and a dash of salt; spread on cake. Serves 15. Store cake in refrigerator.
