    1 package yellow cake mix
    1 cup crushed pineapple, undrained
    1/2 cup sugar
    1 - 3 ounce package instant vanilla pudding
    8 ounces whipped cream, or frozen whipped topping, thawed
    1 cup coconut, optional
    1 cup pecans, toasted, chopped, optional

    Bake two-layer cake according to package directions.

    While cake bakes, in a saucepan over medium heat combine pineapple, its juice, sugar and coconut, if using. Simmer 5 minutes; set aside.

    Make pudding according to package directions; set aside.

    When cake is done, remove from oven, and turn out onto racks.

    Working while cake isd still warm, place first layer of cake on cake plate with a deep lip. Using a wooden spoon handle, make holes in cake layer. Slowly pour half of pineapple mixture over cake and spread evenly. Allow to cool. Spread with layer of pudding, then layer of whipped cream or topping.

    Place second layer on top of first, and repeat procedure. Top with chopped pecans if desired. Makes 1 9-inch, 2-layer cake.

    Options: You can make this cake in a sheet pan 9x13, and top with ingredients in same order as given above.
