    1 c. butter, softened
    2 c. sugar
    1 tsp. vanilla
    3 1/4 c. sifted all purpose flour
    3 1/2 tsp. baking powder
    3/4 tsp. salt
    1 c. milk
    8 egg whites

    Frosting:
    12 egg yolks
    1 3/4 c. sugar
    1/2 tsp. salt
    3/4 c. butter
    1/2 c. bourbon
    1/2 c. quartered candied cherries
    1 1/2 c. chopped pecans
    1 1/2 c. chopped seeded raisins
    1 1/2 c. flaked coconut

    Recipe



    Cake:
    Cream butter; gradually add sugar, beating well at medium speed of electric mixer.

    Add vanilla, mixing well.

    Combine flour, baking powder and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture.

    Mix well after each addition.

    Beat egg whites (at room temperature) until stiff peaks form; fold whites into batter.

    Grease 3- 9" round cakepans and line with wax paper; grease wax paper. Pour batter into prepared pans; bake at 350° for 18-20 minutes or until a wooden pick inserted in center comes out clean.

    Cool in pans 10 min.; remove from pans, and let cool completely on wire racks. Spread frosting between layers and on top and sides of cake.

    One 3- layer cake.

    Frosting:
    Combine first 4 ingredients in top of double boiler;
    beat at low speed of an electric mixer 30 seconds
    or just until blended. Bring water to a boil; reduce heat to low and cook, stirring constantly, until mixture is slightly thickened (about 20 min). Remove from heat; add bourbon and beat at low speed 1 minute. Combine remaining ingredients in large bowl. Pour egg mixture over fruit-nut mixture, mixing well.
    Cool completely.
    Yield 5 cups.
