    West Hollywood Lemon Ice Box Cake

    1 cup crushed corn flake crumbs
    2 tbsp. sugar
    1/4 cup melted butter

    Mix together and line bottom of 9x9 pan, reserving a small portion to sprinkle on top of lemon mixture.

    Lemon Mixture:
    3 egg yolks (beaten)
    3 egg whites (stiffly beaten)
    3/4 cup sugar
    4 tbsp. lemon juice
    1 lemon rind, grated
    1 cup whipping cream
    pinch salt

    Combine egg white mixture and whipped cream and fold in lemon mixture. Pour into crumb crust and top with the remaining portion of the crumbs. Freeze.
