2 teaspoons vanilla
2 cups sifted all-purpose flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt

Preheat oven to 350 degrees. Grease and flour a 9 x 13 x 2-inch oblong pan.
In a mixing bowl, combine apples and sugar and let stand for approximately 1 hour. In a separate bowl, beat eggs slightly, then add oil and vanilla; set aside.
In a large mixing bowl, combine sifted flour, baking soda, cinnamon, and salt; stir into egg mixture alternately with apple-sugar mixture. Stir in walnuts.
Pour into pan and bake for 1 hour (or until cake tests done). Let stand in pan until quite cool; turn out on rack to complete cooling. Frost with Lemon Butter Frosting and decorate with black walnut halves, if desired. Cut into squares to serve.
