    2 cups boiled peanuts, shelled
    4 eggs
    2 cups sweet potatoes, fresh baked or canned
    1 ¼ cups sugar
    2 tablespoons syrup
    ½ teaspoon baking powder
    2 teaspoons pumpkin pie spice
    ½ teaspoon cinnamon
    6 ounces cream cheese
    ½ stick butter
    2 cups powdered sugar
    1 cup satsuma tangerine slices, seeded (or use Mandarin oranges)
    ½ cup parched peanuts

    Recipe



    Preheat over to 350 degrees. In a blender or food processor, combine boiled peanuts (you may use shelled raw peanuts that have been boiled for 2 hours) and eggs till smooth. Add sweet potatoes, sugar, syrup, baking powder and spices. Process again until smooth.

    Spray 2 round cake pans with oil. Fill with batter. Bake for 60 minutes. Cool. Be sure the cake is completely cool before removing from pans due to the denseness and softness of the cake.

    Combine cream cheese, melted butter and powdered sugar. Spread between layers and over the top and sides of cake. Decorate with satsumas and parched peanuts. Serves 8.
