    CAKE
    2 1/2 cups sugar
    3 eggs
    1 1/2 cup vegetable oil
    3 cups flour
    2 teaspoons vanilla extract
    1 cup toasted chopped walnuts
    2 3/4 cups apples -- peeled and diced

    TOPPING
    1 cup butter
    2 cups dark brown sugar

    Preheat oven to 350F degrees. Lightly grease and flour a 9-by-13-inch baking dish.

    Prepare the cake: In the large bowl of an electric mixer, cream together sugar, eggs and oil on medium-high speed until smooth and blended. Add flour and vanilla; mix until blended. Stir in walnuts and apples. Spread batter into prepared pan and smooth top. Bake in preheated oven 50-60 minutes. Cake is done when a toothpick inserted in center of cake comes out clean.

    Ten minutes before the end of the baking time, prepare topping: In a medium saucepan, combine butter and brown sugar. Bring to a boil on medium heat, stirring constantly. Allow to boil 2 minutes, whisking constantly to prevent scorching and to combine the butter and sugar. Remove from heat.

    Poke holes at 1-inch intervals all over the cake. Pour topping over the top. Cool.
