Coffeecake
1 1/2 cups sifted flour
1/2 teaspoon salt
3 teaspoons baking powder
3/4 cup sugar
1/2 cup regular margarine
1 egg or 1/4 cup egg substitute
1/2 cup milk
1 teaspoon vanilla
Topping
1/4 cup margarine
2 tablespoons flour
1 cup brown sugar
1 cup chopped pecans
Recipe
Preheat oven to 375 degrees.
Grease bottom of 9 x 9-inch baking pan.
For coffeecake, sift together flour, salt, baking powder and sugar. With a fork, cut in margarine.
In another bowl, beat egg with a fork. Combine with milk and vanilla. Add to dry ingredients. Mix until blended. (Do not beat hard.)
Spread half of batter in prepared pan. For topping, combine margarine, flour, brown sugar and pecans. Sprinkle half of topping over batter. Spoon remaining batter over topping. Sprinkle remaining topping on top. Bake for 40 minutes, or until done.
Variations: Variation: Reduce oven temperature to 350 degrees if using glass baking dish.
