    Fill 'Er Up Chocolate Cupcakes

    1 1/2 C cake flour
    3/4 C sugar
    1 t baking soda
    1/2 t salt
    1 1/2 squares chocolate, melted
    1 heaping tablespoon butter, melted
    1 C buttermilk
    whipped cream

    ICING
    1 C liquid, half milk and half cream
    1 1/2 squares chocolate
    2 C sugar

    Mix ingredients in order, melting chocolate and butter together. Bake in cupcake cases at 350. When cool, cut cap off top and save; scoop out center of cupcake to within 1/2 inch of bottom and sides. Fill hole in cupcake with whipped cream. Put cap back on and ice with chocolate icing.

    For icing, boil milk, cream and chocolate until thick (like pudding). Add sugar; boil slowly to soft ball stage (about 242 on a candy thermometer). Cool; then beat with an electric mixer, adding a little cream to adjust consistency.
