    Cake
    2 cups flour
    1 teaspoon baking soda
    1/4 teaspoon salt
    1/2 cup smooth or chunky peanut butter
    1/4 cup butter or margarine
    1 1/2 cups sugar
    1 teaspoon grated orange zest
    2 eggs
    1 cup fresh orange juice
    1 cup sour cream
    1 teaspoon vanilla
    1 tablespoon honey

    Peanut Butter & Jelly Icing
    1 1/2 cups confectioners' sugar
    1 cup milk
    2 tablespoons light corn syrup
    1 tablespoon butter or margarine
    1 1/4 cups smooth or chunky peanut butter
    1 teaspoon vanilla

    Preheat oven to 350 degrees. Lightly grease and flour 12 x 9 x 2-inch baking pan.

    Sift together flour, baking soda and salt. Cream peanut butter, butter and sugar until light and fluffy. Beat in orange zest and eggs. Add orange juice, sour cream, vanilla and honey alternately with dry ingredients. Blend well.

    Spread batter in prepared pan. Bake for 40 minutes, or until done. Cool on a wire rack.

    For icing, combine confectioners' sugar, milk and corn syrup in saucepan. Bring to a boil. Cook gently for 3 minutes. Remove from heat. Cool completely. Add butter, peanut butter and vanilla. Beat until mixture thickens to spreading consistency.

    Spread icing over top of cake. Make small in-dentations in icing. Fill each with a dollop of jelly.



    Notes: If icing is too thick, add a little milk; if icing is too thin, add a little confectioners' sugar.
