Golden Sweet Potato Cake

2 cups sugar
10 tablespoons butter, at room temperature
4 eggs
2 1/2 cups mashed sweet potatoes
3 cups flour
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cardamom
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla
1/2 teaspoon orange extract
1/2 cup sweetened flaked coconut
1/2 cup golden raisins
2 tablespoons finely chopped pecans
Recipe
Preheat oven to 350 degrees.
Lightly grease 10-inch tube pan.
In large mixing bowl, beat together sugar and butter on medium speed. Mix well. Gradually add eggs, 1 at a time. Add sweet potatoes. Combine well.
Combine flour, cinnamon, nutmeg, cardamom, baking powder, baking soda and salt, stirring well after each addition. Add vanilla and orange extract. Add to wet ingredients in thirds. Mix well.
Pour batter into prepared pan. Sprinkle coconut, golden raisins and pecans evenly over batter. Bake for 1 hour and 25 minutes, or until done. Cool in pan for 12 minutes. Remove from pan. Cool completely on a wire rack. Dust cake with confectioners’ sugar before serving, if desired.
