Mocha Chocolate Chunk Cake

2/3 cup flaked sweetened coconut
1/2 cup chopped pecans
1/2 cup packed light brown sugar
1/2 cup semisweet chocolate chunks
2 tablespoons unsalted butter, melted
4 cups biscuit mix
1-1/3 cups milk
1/2 cup granulated sugar
1/4 cup unsalted butter, melted
2 eggs
4 ounces bittersweet chocolate, melted
1 tablespoon powdered instant coffee
Recipe
Preheat oven to 400 degrees F. Line a 13x9-inch baking pan with parchment paper.
In a bowl, combine coconut, pecans, brown sugar, chocolate chunks, and 2 tablespoons butter. Set aside.
In a large mixer bowl, using an electric mixer, beat biscuit mix, milk, sugar, 1/4 cup butter and eggs on medium speed for 4 minutes. Pour into prepared pan, spreading to edges with a rubber spatula.
In small bowl, blend melted chocolate and instant coffee. Drizzle over top of cake mixture and lightly swirl into batter with a knife. Sprinkle evenly with reserved coconut mixture. Bake in preheated oven until light golden brown, 25 to 30 minutes.
