Mocha Oatmeal Bundt Cake

2 Tbsp. instant coffee
1 1/3 c. boiling water
1 c. quick oatmeal
3/4 c. butter or margarine
1 c. sugar
1 c. brown sugar
2 eggs
1 1/4 tsp. vanilla
2 c. sifted flour
1 1/4 tsp. soda
3/4 tsp. salt
3 Tbsp. cocoa
1 1/2 Tbsp. butter
1 c. confectioners sugar
1/2 tsp. vanilla
1 1/2 Tbsp. instant coffee
Recipe
Combine instant coffee and boiling water; pour over oats and stir to combine. Cover and let cool 20 minutes. Beat 3/4 cup butter until creamy; gradually add 1 cup sugar and 1 cup brown sugar beating until fluffy. Add eggs, one at a time, and beat well. Blend in vanilla; add oats mixture and mix well. Sift flour, soda, salt and cocoa; add to creamed mixture, blending well. Pour batter into a generously greased and floured Bundt pan and bake for 50 to 55 minutes in a 350 degrees oven. Remove from oven and cool on rack.
Frosting: Beat 2 1/2 tablespoons butter until creamy; add sugar, vanilla and 1 1/2 tablespoons instant coffee. Beat until smooth and drizzle over cake.
