    Over the Top Chocolate Layer Cake

    1/2 cocoa powder
    3/4 cup brewed coffee
    1/2 cup cold water
    2 tsp. vanilla
    2-1/2 cups flour
    1-1/2 tsp. baking soda
    1/2 tsp. salt
    3/4 cup unsalted butter, softened
    1-1/2 cups sugar
    3 large eggs, room temperature
    6 oz. unsweetened chocolate, melted

    Bake at 350º. Grease and flour 3-9" round cake pans.Line the bottoms with waxed paper. Set aside. In a small bowl, whisk the cocoa, coffee, and water. Add vanilla. Set aside. In a medium bowl, sift flour, soda, and salt. Set aside. In a large bowl, cream butter and sugar on medium speed until fluffy, about 3 minutes. Beat in eggs, one at a time. Add chocolate, beat in dry ingredients, alternating with liquids. Divide batter in pans. Bake 20-25 minutes. Let cool 10 minutes and remove from pans to cool on wire racks. This batter will make 24 cupcakes, baked 20-22 minutes. Remove from pans to cool on wire racks upon leaving oven. Frost as desired.
