1 package Pie Crust (2 crusts)
Coconut filling:
2 4.6 oz. packages of cook and serve coconut pie filling
4 cups milk
1/2 cup coconut milk
1/2 cup coconut flakes
2 tablespoons coconut extract flavoring
Pineapple filling:
1 can crushed pineapple (20 oz.)
1 package dried pineapple chunks (9 oz.)
1/2 cup pineapple juice
2 tablespoons sugar
Preheat oven to 450 degrees. Prepare pie crust in 9-inch pie dish. Bake for 5 minutes. Prepare the coconut filling by stirring together the coconut pie filling and milk. Boil mixture and allow to thicken. Let sit for 5 minutes and stir again. Once cooled, stir in coconut milk, coconut flakes and coconut extract. Allow to sit for 10 minutes before adding to the bottom crust. Prepare pineapple filling by draining crushed pineapple and adding dried pineapple chunks, pineapple juice and sugar. Add mixture as second layer of the pie. Top with second crust and decorate as desired. Bake for 20-30 minutes or until top crust is golden brown. Serves 8-10.
