    Cake
    3 cups flour
    1 1/2 cups sugar
    1 1/2 teaspoons baking powder
    1 teaspoon baking soda
    1/4 teaspoon salt
    1/2 cup rum or rum flavoring
    1/2 cup fresh lime juice
    1/4 teaspoon almond extract
    2/3 cup buttermilk or sour cream
    1/2 cup shortening
    2 eggs
    1 (10-ounce) package frozen strawberries, thawed, well drained (reserve juice) and chopped

    Frosting
    1 1/4 cups sugar
    1/3 cup strained reserved strawberry juice
    2 egg whites
    2 teaspoons light corn syrup
    1/2 teaspoon rum
    3 drops red food coloring (optional)

    Preheat oven to 350 degrees. Lightly grease 13 x 9 x 2-inch baking pan.


    Variations: Serves 12-16.

    Notes: Instead of frosting, you may dust top of cake with confectioners' sugar, if desired.

    Serving quantity: In large mixing bowl, combine flour, sugar, baking powder, baking soda and salt. Add rum, lime juice
