Strawberry Shortcut Cake

1 cup miniature marshmallows
2 (10-ounce) packages frozen strawberries in syrup, thawed
1 (3-ounce) package strawberry gelatin
2 1/4 cups flour
1 1/2 cups sugar
1/2 cup shortening
3 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 teaspoon vanilla
3 eggs
Recipe
Preheat oven to 350 degrees. Grease bottom of 13 x 9 x 2-inch baking pan. Spread marshmallows over bottom of prepared pan.
Combine strawberries and gelatin.
Combine flour, sugar, shortening, baking powder, salt, milk, vanilla and eggs in large mixing bowl. Mix on medium speed for 3 minutes. Gently pour evenly over marshmallows. Top with strawberry mixture.
Bake for 40 to 50 minutes, or until golden. Serve warm or cool with whipped cream or whipped topping, if desired.
