    1/2 cup fresh lemon juice
    1 (3-ounce) package lemon gelatin
    1 (18 1/4-ounce) package lemon cake mix
    3/4 cup shortening or oil
    4 eggs
    1 (6-ounce) can frozen lemonade concentrate, thawed
    3/4 cup confectioners� sugar or sugar
    1/4 teaspoon vanilla

    Recipe



    Preheat oven to 350 degrees. Lightly grease and flour tube pan.
    Bring lemon juice to a boil. Dissolve gelatin in lemon juice.

    In mixing bowl, beat cake mix, shortening and eggs on medium speed. Pour in gelatin mixture. Beat for 5 minutes. Pour into prepared pan. Bake for 1 hour, or until done.

    Prick hot cake with a fork all over top. Combine lemonade concentrate, confectioners� sugar and vanilla. Slowly pour over cake, letting mixture fill each small cavity. Cool completely.

    To serve, turn cake out onto serving plate. Lightly dust with additional confectioners� sugar, or serve with a dollop of whipped cream on individual servings, if desired.



    Variations: You may substitute 1 (18 1/4-ounce) package white cake mix plus 1 cup fresh lemon juice for lemon cake mix.
