Summertime Lemonade Cake

1/2 cup fresh lemon juice
1 (3-ounce) package lemon gelatin
1 (18 1/4-ounce) package lemon cake mix
3/4 cup shortening or oil
4 eggs
1 (6-ounce) can frozen lemonade concentrate, thawed
3/4 cup confectioners’ sugar or sugar
1/4 teaspoon vanilla
Recipe
Preheat oven to 350 degrees. Lightly grease and flour tube pan.
Bring lemon juice to a boil. Dissolve gelatin in lemon juice.
In mixing bowl, beat cake mix, shortening and eggs on medium speed. Pour in gelatin mixture. Beat for 5 minutes. Pour into prepared pan. Bake for 1 hour, or until done.
Prick hot cake with a fork all over top. Combine lemonade concentrate, confectioners’ sugar and vanilla. Slowly pour over cake, letting mixture fill each small cavity. Cool completely.
To serve, turn cake out onto serving plate. Lightly dust with additional confectioners’ sugar, or serve with a dollop of whipped cream on individual servings, if desired.
Variations: You may substitute 1 (18 1/4-ounce) package white cake mix plus 1 cup fresh lemon juice for lemon cake mix.
