The Big Sur Cheesecake

List of Ingredients
2 cups finely chopped butter cookies, crushed; add 1/3 cup melted butter.
1 can (15 ¼ oz.) ounces unpeeled apricot halves, drain – keep 3 cups.
3 8oz. pkgs. cream cheese, softened
1 cup sugar
1-1/2 teaspoons vanilla
3 eggs
1 10-oz. low calorie apricot
spread & ¼ cup apricot nectar
Recipe
1.Coarsely chop apricots
2.Mix cream cheese, sugar and vanilla
3.Add 1 egg at a time
4.Mix well.
5.Stir in chopped apricots
6.Spray non-stick spray on 9-inch baking pan or cookie sheet
7.Bake @ 325° F. for 50 minutes.
8.Let cool.
9.Heat the apricot spread & ¼ cup apricot nectar in microwave. Stir together.
10.Pour mixture over the cooled cheesecake.
