    Toasted Almond White Choco Cheesecake

    2 and a half cups toasted almonds
    1 stick butter, melted
    1/2 cup sugar
    1 cup milk chocolate chips
    12 ounces cream cheese
    1 cup white chocolate, melted and slightly cool
    Juice and grated rind of half a lemon
    1/2 cup powdered sugar
    2 cups assorted raspberries, strawberries and blackberries
    Mint leaves

    Almond Crust

    Blend almonds in food processor until fine crumbs.
    Mix almond crumbs, sugar and butter together and put into a tart pan with a removable base and side.
    Bake for 20 minutes in a 350 degree oven. Let cool.
    Melt chocolate in a double boiler until melted and pour melted chocolate on the bottom of the baked tart and let cool.

    White Chocolate Filling

    Mix cream cheese, lemon rind and juice, sugar and melted white chocolate together until smooth and creamy.
    Pour on top of chocolate tart.
    Pour berries on top and garnish with fresh mint.
    Store in refrigerator until ready to serve.

    Serves 8-10.
