Tropical Carrot Cake

3 Large eggs
3/4 cup of vegetable oil
3/4 cup of buttermilk
2 cups of all purpose flour
2 cups of sugar
2 tsp. baking soda
2 tsp. ground cinnamon
1/2 tsp. salt
2 tsp. vanilla extract
2 cups finely shredded carrots
1 cup of raisins
1 (8oz.) can of crushed pineapple, undrained
1 cup of chopped walnuts
1 cup flaked coconut
Frosting:
1 (8oz.) pack of cream cheese, softened
4 to 4-1/2 cups of confectioners' sugar
1 to 2 Tbsp. milk or heavy cream
1 tsp. vanilla extract
Recipe
In a large mixing bowl, beat eggs,oil and buttermilk. In separate bowl, combine flour, sugar, baking soda, cinnamon and salt; add to egg mixture and mix well. Stir in vanilla, carrots, raisins, pineapple, walnuts and coconut; mix well.
Pour into a greased 13x9 baking pan. Bake in preheated 350 degree oven for 45 to 50 minutes or until cake test done. Completely cool pan on wire rack.
For frosting beat all ingredients in a mixing bowl until smooth and frost cake.
