    Pastry:
    1/2 cup butter
    2 cups flour
    3/4 cup sugar (white or brown)
    1 teaspoon baking powder
    3 Tablespoons water

    Filing:
    1 coconut
    1 cup brown sugar
    1 cup water

    Recipe



    Pastry: Mix dry ingredients with butter until mixture is crumbly, then add water. Dough should be slightly sticky. Pat into 9-inch pie pan, reserving enough dough to make a latticework top.

    Filing: Grate coconut (coarsely) into a pot; add sugar and water and heat until mixture becomes syrupy. Pour into crust and make latticework over the top by rolling out thin strips of reserved dough. Bake at 350 degrees, covered with foil for first 1/2 hour, then uncovered until golden brown.
