1-1/3 cup sugar
1/2 scant cup butter
3 whole eggs, beaten slightly
1 teaspoon cornmeal
1 Tablespoon vinegar (cider or white wine)
1 teaspoon vanilla
Recipe
Melt butter and add sugar, eggs, meal, vinegar, and vanilla. Bake in uncooked pie shell (8 or 9 inch) for 40 minutes at 375 degrees. For individual pies, cut pie crust with a 2-pound coffee tin, shape into muffin pans. 1/2 to 3/4 inch of filling is sufficient in individual pies.
