    Cake:( chocolate sponge )
    4 large eggs
    1/2 cup sugar
    1/2 cup flour
    1/2 cup cocoa powder
    2 Tbs. melted butter or margarinne
    Sugar Syrup to brush on cake :
    1/2 cup water
    1/2 cup sugar
    2 Tbs. liquor ( cherry, orange, mocha or almond flavor )
    Mousse:
    2 cups heavy cream
    1/2 cup semi sweet good quality chocolate pieces
    1 Tbs. gelatin
    2 Tbs. water
    1 to 2 Tbs. liquor ( optional ) to flavor mousse
    Garnish as desired

    One can use any favorite chocolate cake recipe for a single 9 inch springform cake pan recipe or the chocolate sponge cake recipe above. For the cake, beat eggs and sugar with electric mixer until very voluminous and fluffy. Sift flour and cocoa and fold carefully into egg mixture. Blend in the melted butter, mixing carefully so as to keep the volume. Place batter into a well greased 9 inch springform pan and bake 325F until done, about 20 to 30 minutes. Cool completely. Remove and freeze if desired to assemble cake later . Meanwhile boil sugar and water about 5 minutes or until syrup like. Remove from heat and add some liquor to taste
    ( ex: cherry, mocha or almond flavor ) When cold ,slice cake in half. Brush syrup on each cake half.

    For mousse. Melt chocolate with 2 Tbs water and 2 Tbs sugar in heavy duty saucepan on lowest heat until chocolate is melted. Blend smooth and set aside.. Dissolve gelatin in the water and add to the chocolate mixture, blending well. Meanwhile whip cream until stiff and fold and blend well into the chocolate mixture. Prepare cake. : Place one cake layer in 9 inch springform. Spread evenly with half the mousse. Add second cake layer and spread with remainder of mousse. Cover and chill 12 hours or overnight. Carefully remove sides of springform ( run knife tip along edges ) to release cake. Don't worry if some uneven spots show around the side. Simply whip some cream with a bit of powder sugar and spread evenly along the sides and then use some to pipe rosesettes on top of cake.
    Note: This is very impressive and the mousse has great texture and taste. If desired, one can add a Tbs or so of liquor to flavor the chocolate mousse
