Coffee and Walnut Cake

1 1/2 tbsp. cornstarch
1/2 cup freshly brewed coffee
3/4 cup of sugar
1/2 cup of brown sugar
1/2 cup of golden raisins
1/2 cup of regular raisins
1/2 cup of chopped walnuts
1/2 cup of butter room temperature
3 eggs beaten
2 cups of all purpose flour
1 1/2 tsp Cream of Tartar
1 1/2 tsp. Baking Soda
1/2 cup of milk room temperature
1 tsp. Vanilla extract
1/4 tsp. Salt
In a medium sauce pan over medium low heat, mix the coffee with cornstarch until smooth. Add 1/2 cup of sugar and continue cooking until sugar is dissolved.
Add raisins and walnuts and set aside until cool. Beat the butter with the brown sugar and the rest of the white sugar until thick and lighter in color.
Add flour and salt.
Add cream of tartar, baking soda, and slowly add milk.
Add vanilla and eggs one at a time.
Pour half the batter in a buttered cake pan and spread with the coffee mixture, cover with the remaining batter.
Bake in a preheated 350 oven for about 40 minutes, until knife comes out clean.
