a small rectangle pan about 6 X 9X 1"
1 cup sugar
2 rounded tablespoonfuls crisco
1 egg
1 cup milk
1/2 teaspoon salt
1 teaspoon vanilla
2 cups flour
2 teaspoonfuls baking powder Recipe
Sift dry ingredients together except sugar. In a small mixing bowl: cream sugar and crisco. Add the egg and vanilla, slowly stir in milk, then the dry ingredients.
Pour batter into the prepared pan. Bake in preheated 350 degree oven 20-25 minutes, or until center is done.
In the meantime make the icing, keeping in mind you want to spread it on warm cake
Cooked fudge frosting
1 cup sugar
1/4 cup milk
1/4 cup cocoa
1 teaspoon butter
1 teaspoon vanilla
pinch of salt
In saucepan mix: sugar and cocoa, and salt, then add milk stir till blended. Bring to a boil over medium heat. Now let it simmer for about 4 minutes; cook till soft ball stage. It must be to this point or you will have s syrup like Hersheys, too long it will resemble chocolate cement. Sooooo remove this from the heat and DO NOT STIR. Let it set in the pan to cool to warm, not cold, warm.
Now: with a spoon beat the fudge evenly. I tip the pan a little until the icing is thickening, add butter and vanilla at once then pour over the cake spreading swiftly as the icing sets instantly. The trick is to pour it just as it is thickening so it is still fluid enough to spread.
