    2 eggs + 1 yolk
    1 cup skim milk
    2 tsp vanilla
    1/4 tsp nutmeg
    1 Cup flour
    1/3 Cup sugar
    1/4 tsp salt
    1 tsp baking powder
    3 pears
    1/2 Tbsp powdered sugar

    Recipe



    Preheat oven to 375°.
    In bowl beat together eggs, plus yolk, skim milk, vanilla, and nutmeg
    Sift flour with sugar, salt, and baking powder
    Gradually add liquid ingredients
    Pour batter into a deep 9" pie dish
    Peel pears; cut in half lenghtwise, removing cores and seeds
    Place pears in a circle in the batter, cut sides down & stem ends towards center
    Do not allow the bottom ends to touch the sides of the pan. The round sides of the pears will be above the batter level
    Bake for 35 minutes or until top is a deep golden brown and pears are tender when pierced with a knife. The batter will have puffed
    Pear cake can be eaten warm or cool
    Sprinkle with powdered sugar before serving
