55 Ritz crackers - crushed
6 egg whites stiffly - beaten
2 tsp vanilla
2 cups sugar
1 cup nuts Recipe
Mix all together and bake @350° for 30 minutes.
Poke holes in cake and pour pineapple juice only over cake (from drained pineapple in following icing)
Icing:
8 oz Cool Whip
8 oz cream cheese - softened
15 oz can crushed pineapple (drained well)
1 tsp vanilla
Mix all together and ice cake.
Notes:
You can lightly butter the pan. I use a 9x13 inch pan which is what it is best in. I have made it in 2 8x8 pans if I was taking this somewhere or going to give one away
First beat the egg whites stiff. Then just add the rest. It is not necessary to slowly add the rest, just make sure your egg whites are beaten stiff then add the rest.
It calls for 15-oz can of pineapple. I use the 20-oz can but I suppose without the juice it is 15-oz which is why it states it that way. Make sure you reserve all juice of the pineapple to pour over the baked portion before adding the icing.
