    1 1/2 c hot water
    1 c oats
    1/2 c butter
    1 1/4 c packed brown sugar
    2 eggs
    1 tsp vanilla
    1 c whole wheat flour
    1/2 c all purp. flour
    1 tsp each of cinnamon, baking powder, baking soda
    1/2 tsp salt
    1 c raisins
    1/2 c sunflower seeds
    1 c coconut

    Recipe



    Stir together hot water, oats and butter until the butter melts. Beat in brown sugar, eggs and vanilla.

    In a second bowl, stir together all dry ingredients (except raisins, seeds and coconut) and stir that into the oat mixture. Next, stir in raisins and sunflower seeds.

    Pour batter into greased and flowered 9x13" pan. Sprinkle coconut evenly over top.

    Bake at 350º for 35-40 minutes until toothpick tests clean.


    Note: You can also sprinkle the coconut into the greased/floured bundt pan first, and then add batter, bake and invert on rack when done for an appearance variation.
