3/4 cup unsalted butter, softened
3 eggs, room temperature
1-1/2 cups flour
1 teaspoon baking powder
1/4 teaspoon nutmeg
3/4 cup sugar
1/4 cup Jack Daniels bourbon
1 teaspoon fine lemon zest
1/2 teaspoon vanilla
Syrup
1/3 cup sugar
1/4 cup water
2 tablespoons brown sugar
2 tablespoon corn syrup
1/2 cup Jack Daniels
Recipe
Preheat oven to 325 degrees
Grease and flour 2 regular loaf pans or 6 mini loaf pans (the mini ones are perfect for giving, this is a very rich cake and small slices are best)
To make the cake:
Sift together all the dry ngredients. Cream the butter and slowly add sugar until very light and fluffy. Stir in the Jack Daniels, lemon zest and vanilla. Add the eggs one at a time, beating well after each addition. Slowly add the flour mix until well combined. Beat an additional 2 minutes. Pour into the pans and bake 25 minutes(for the small pans), or until golden brown and a pick inserted into the cake comes out clean. Cool 5 minutes.Dip the cake into the syrup, and pour the remainder of the syrup on top to soak in. Wrap tightly with saran wrap and refrigerate for 2 to 3 weeks. To serve, let warm to room temperature
To make the Syrup:
Combine everything but the bourbon in a saucepan, Cook until thesugars are dissolved. Remove from heat and add the bourbon. Stir well and set aside.
