    1-1/2 cups all-purpose flour
    1 cup sugar
    pinch of salt
    1 cup oil (I use canola, its lighter)
    4 eggs
    grated peel (zest) of 1 lime
    2 Tbsp. bottled key lime juice
    1/3 cup rum
    2 tsp. baking powder

    Recipe



    Preheat oven to 325º. Prepare Bundt pan with light butter.

    In large bowl, mix together flour, sugar, salt, oil and eggs. Add lime peel, lime juice and rum, mix well. Stir in the baking powder.

    Pour batter into pan and bake one hour. Cool for 10 minutes before removing pan
