Killer Key Lime Cheesecake

1 3/4 cups graham cracker crumbs
5 Tablespoons butter (melted)
1 Cup plus 1 Tablespoon of Sugar
3 packages (8 oz each) of softened cream cheese
1 Teaspoon Vanilla
1/2 Cup FRESH lime juice (5 to 6 limes)

Preheat oven to 350º
Combine graham cracker crumbs with melted butter and 1 Tablespoon of sugar in medium bowl. Stir well enough to coat all the crumbs, yet keep it crumbly. Press these crumbs into to bottom (and about halfway up the sides) of a 8 inch springform pan. Bake crust for 5 minutes, then set aside until ready to fill.
Combine the softened cream cheese, 1 Cup of sugar and the vanilla in a large mixing bowl. Mix with an electric mixer until SMOOTH. Slowly add the lime juice and eggs. Continue to mix until smooth and creamy.
Pour filling into pan and bake at 350º for 60 to 70 minutes (till top of cheesecake is light brown).
Remove from oven and allow to cool. Once the cheesecake has come to room temperature THEN put it in the refrigerator. Once the cheesecake has thoroughly cooled, remove the pan sides, cut and serve.
HINT: Bake cake at least 1 to 2 days before serving. It's even BETTER after it's been chilled for a while
