Microwave Pumpkin Pie

16 oz. can of pumpkin
12 oz. can evaporated milk
2 eggs
1/2 cup of buttermilk baking mix (Bisquick)
3/4 cup sugar or use 18 packets Equal
1/4 tsp ground cloves
1 tsp cinnamon
2 tsp. vanilla
Whipped topping
Spray a 9-inch glass pie pan with nonstick cooking spray. Place all ingredients in a blender. Blend 1-2 minutes. Pour into pie plate. Microwave pumpkin pie at 50% power 15 to 20 minutes or until center jiggles slightly. Let stand 15 minutes.
Cut and serve with whipped topping sprinkled with a little cinnamon.
*If you want to, you can add extras to this recipe like walnuts, pecans, cranberries, a little extra seasoning for flavor {ie. vanilla extract, caramel, chocolate, nutmeg, etc.}
