Mocha Chocolate Chip Pound Cake

1 pound unsalted butter
3 cups sugar
6 eggs
1 cup strong (double strength) coffee, cooled
2 teaspoons pure vanilla extract
4 cups unbleached all-purpose flour
1 tablespoon baking powder
1 cup chocolate chips
Preheat oven to 350 degrees. Butter and flour (or spray) one full-size bundt or tube pan. Cream together the butter and sugar in an electric mixer. Add the eggs, one at a time. Mix cooled coffee and the vanilla. Sift together the flour and the baking powder. Add the dry and wet ingredients to the butter-egg mixture alternately, beginning and ending with the dry. Fold in the chocolate chips. Pour into the prepared pan. Bake for 1 hour, or until a toothpick comes out dry. Cool in pan for 10 minutes, then turn out into a cooling rack. Allow to cool completely before slicing. Makes one cake.
