Orange Sponge Cake

2 eggs
1 C sifted granulated sugar
1 T grated orange rind
1/4 C orange juice
1/4 C cold water
1-1/4 C sifted cake flour
2 tsp baking powder
1/4 tsp salt

Recipe



Beat eggs until thick and lemon colored
Gradually add sugar until well blended
Add the orange rind, orange juice and water. Beat for 1/2 minute
Sift together flour, baking powder, and salt 3 times and fold into egg mixture
Bake in a greased & floured 8x8" pan at 350, 40 minutes or until done
Invert cake pan on rack until cold before removing cake from pan
