    Pineapple Angel Food Pie

    3 Egg whites
    1 cup Water
    1 cup Crushed canned pineapple
    1 cup Sugar
    3 tablespoons Cornstarch
    1/2 teaspoon Vanilla
    1/2 teaspoon Lemon extract
    1 baked 9-inch Pie shell

    Put water and pineapple to boil. Mix sugar and cornstarch, add to boiling pineapple and cook until clear. Beat egg whites until stiff, add vanilla and lemon extract. Fold cooked custard into egg whites gently. Put into baked pie shell. Put into refrigerator. Top with whipped cream when ready to serve.
