    8oz self-rising flour (self-raising flour) 2 cups
    4oz superfine sugar (caster sugar) ½ cup
    4oz room temperature butter, or margarine (suitable for baking) ½ cup
    4oz mixed fruit, ie currants, sultanas, chopped candied peel ¾ cup
    1 egg
    A little milk

    First pre-heat your oven, then put the flour into a bowl and using your fingertips rub the butter or margarine into the flour until it looks like breadcrumbs, now add the superfine sugar and the mixed fruit.

    In a smaller bowl beat the egg with a little milk and add to the other ingredients. Using a fork or spoon mix everything together; the mixture should be fairly gooey and stiff.

    The next thing to do is to butter a patty tin then fill with the mixture. The finishing touch is to sprinkle superfine sugar on top of your cakes and bake them for approximately 20 minutes at 400°F (200°C), or until they are golden.

    Your rock cakes will not only smell delicious when baking but will taste delicious too.
