Solo Fancy Poppy Seed Cake

1 cup sweet butter, softened
1-1/2 cups sugar
1 can Solo fancy ground poppy seed filling
1 cup sour cream
5 eggs, separated
1 tsp. pure vanilla extract
2-1/2 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
confectioner's sugar
Recipe
Preheat oven to 350º. Grease and flour bundt or tube pan and set aside.
Beat butter and sugar in large bowl with electric mixer until light and fluffy. Add poppy seed filling and beat until blended.
Beat in egg yolks, 1 at a time, beating well after each addition. Add van extract and sour cream and beat just until blended. Stir in flour, baking soda and salt until mixed, add to poppy mixture gradually, beating well after each addition.
Beat egg whites in separate bowl until stiff peaks form. Fold in egg whites into batter.
Spread batter evenly into pan. Bake 60 minutes. Cool in pan 10 minutes. Remove from pan and cool. Dust with confectioner's sugar.
