Sour Cream Orange Cake

3/4 cups sweet butter, softened
2-1/4 cups sugar
2 eggs
2 cups sifted cake flour
1 tsp. baking soda
1/2 tsp. salt
1 cup sour evaporated milk (ADD 2 Tbsp. white vinegar to create sour milk)
1/2 tsp. pure vanilla extract
grated rind of 1 orange
1/2 cup walnuts, finely chopped
1/2 cup pitted cherries, cut in small pieces
1/2 cup raisins
juice of 1 orange (about 1/3 cup)
Recipe
Heat oven at 375º. Grease and flour tube or bundt pan
In a bowl, cream butter until light. Add 1-1/2 cups of sugar and the eggs and beat until creamy and light.
In another bowl stir together sifted flour and baking powder and salt. Add flour mixture to the butter mixture, alternately with sour milk. Add vanilla extract and orange rind. Fold in walnuts, cherries, and raisins.
Pour into pan. Bake for one hour.
Meanwhile, in a bowl stir together in orange juice and the remaining 3/4 sugar.
When cake comes out of oven, cool thoroughly. Place on cake platter. Pour orange glaze over the cake when cool.
