Cream Cheese Ribbon
8-oz cream cheese, softened
1 Tbsp. all-purpose flour
1/3 cup confectioner's sugar
1 egg
1 Tbsp. milk
1/2 tsp. pure vanilla extract
Cake
3 eggs, separated
1-1/2 sticks sweet butter, softened
2/3 cup sugar
1 cup strawberry preserves
1 tsp. pure vanilla extract
2 cups sifted all-purpose flour
2 tsp. baking soda
1/4 tsp. salt
1/2 cup buttermilk
Frosting
3-oz cream cheese, softened
4 Tbsp. butter
1/4 cup strawberry preserves
16-oz box confectioner's sugar
Recipe
Combine all the cheese ribbon ingredients in a medium bowl. Beat until well smooth.
Preheat oven at 350. Grease and flour a 9x 13 inch baking pan.
Beat egg whites until stiff but not dry. Set aside.
In large mixing bowl, cream butter, sugar and strawberry preserves. Add egg yolks and vanilla ex. Beat well.
In a medium bowl, combine flour, baking soda and salt. Add to creamed mixture alternately with buttermilk, starting and ending flour mixture. Fold in the beaten egg whites.
Pour about half the batter into pan. Spoon cream cheese mixture over the batter and carefully spread with back of spoon. (The cream cheese mixture does not have to cover the batter completely). Pour the remaining batter over the cream cheese ribbon. Spread to cover.
Bake 40 minutes. Cool in pan completely in pan before frosting
While cake bakes, make the frosting. Combine cream cheese, butter, and strawberry preserves in large mixing bowl. Beat until well mixed. Add confectioner's sugar. Beat until smooth. Spread on top of cake
