Strawberry Ripple Cake

1 1/2 cups flour
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 egg
2/3 cup milk
1/4 cup (1/2 stick) butter, melted, or canola oil
1/2 cup strawberry jam
Cinnamon streusel topping (see recipe)
Recipe
Preheat oven to 375 degrees.
In large bowl, stir together dry ingredients.
In medium bowl, beat egg with milk and butter. Add egg mixture to flour mixture, stirring until smooth.
Spread batter in a greased 8-inch springform pan. Spoon jam evenly over top. Draw a knife through batter several times, making a figure-8 pattern to create a ripple effect. Sprinkle evenly with topping.
Bake in preheated oven until topping is well browned and wooden skewer inserted into center comes out clean, 40 to 45 minutes.
Let stand about 5 minutes, then remove pan sides, cut into wedges, and serve warm or at room temperature.
Makes 6 to 8 servings.
Cinnamon streusel topping:
1/4 cup flour
1/3 cup sugar
1/2 teaspoon ground cinnamon
3 tablespoons cold butter
In a small bowl, mix flour, sugar and cinnamon. Cut in butter until coarse crumbs form.
