    4 egg whites
    2 cups all-purpose flour
    1 tsp. baking powder
    ½ tsp. baking soda
    1/8 tsp. salt
    ½ cup shortening or butter, softened
    1¾ cup sugar
    1 tsp. vanilla
    1 and 1/3 cups buttermilk or sour milk

    Allow the egg whites to stand at room temperature for 30 minutes. Meanwhile, grease and lightly flour two 9x1½-inch or 8x1½-inch round cake pans; set aside. In a medium bowl stir together flour, baking powder, baking soda, and salt; set aside.

    In a large mixing bowl beat shortening with an electric mixer on medium to high speed for 30 seconds. Add sugar and vanilla; beat until well combined. Add egg whites, 1 at a time, beating well after each addition. Add flour mixture and buttermilk alternately to beaten mixture, beating on low speed after each addition just until combined. Spread batter into the prepared pans.

    Bake in a 350° oven for 20 to 25 minutes for 9-inch pans or 25 to 30 minutes for 8-inch pans, or until a wooden toothpick inserted near the center of each cake layer comes out clean. Cool in pans on wire racks for 10 minutes; remove cakes from pans. Cool thoroughly on wire racks. Makes 12 servings.
