White Chocolate Marscapone Cheesecake

5 1/2 lbs. Cream cheese
1 oz. Cornstarch
1 cup heavy cream
1 cup cherries soaked in Kirschwasser
1 cup blueberries soaked in Kirschwasser
7 oz. Powdered sugar
1 1/4 lbs. Melted white chocolate
3 cup eggs Recipe
Cheesecake:
1. Mix cream cheese, cornstarch, and powdered sugar together until smooth.
2. Add cooled white chocolate.
3. Add eggs slowly 1/2 cup at a time.
4. Add heavy cream, then fruit.
5. Spread on a sheetpan.
6. Bake at 325 degrees for 10 minutes until barely firm to touch.
7. When cool, cut with round cookie cutter into circles.
Florentine Cookies:
1. Cream butter and sugar and glucose till light and fluffy.
2. Add flour and almonds.
3. Spread on a pan.
4. Bake at 300 degrees for 5-10 minutes until lightly browned.
5. Spread on a pan.
6. The mixture will harden when cool.
Assembly:
1. Place one Florentine cookie on a plate. Place one cheesecake round atop the cookie.
2. Add another layer of the cheesecake and top with another cookie. Top the third cookie with fresh fruit.
3. Garnish with fresh berries and a sprig of mint.
(Prior to serving, ladle a puree of raspberries or other fruits around the tower and gently punch two spires of chocolate into top layer of cheesecake.
