    2-1/4 cups flour
    1 teaspoon salt
    2 teaspoons cinnamon
    3/4 cup brown sugar
    3/4 cup sugar
    3/4 cup vegetable oil
    1 egg, at room temperature
    1 teaspoon baking soda
    1 teaspoon baking powder
    1/2 cup molasses
    3/4 cup buttermilk, at room temperature
    1-1/2 cups chopped tart apple
    1/3 cup quick-cooking oats
    1/2 cup chopped walnuts

    Recipe



    Preheat oven to 350 degrees F. Grease a 13-inch by 9-inch baking pan.

    In a large mixing bowl, combine flour, salt, 1 teaspoon cinnamon, brown sugar, and granulated sugar; mix well. Remove 1/4 cup of mixture; set aside for topping.

    To the remainder, add 1/2 teaspoon cinnamon, oil, egg, baking soda, baking powder, molasses, buttermilk, and apple. Mix well. Pour into baking dish.

    To the reserved 1/4 cup topping, add 1/2 teaspoon cinnamon, oatmeal, and nuts. Stir to combine; sprinkle evenly over batter.

    Bake 30 minutes, until a tester inserted in the center comes out clean.

    Serves 12
