Apple Pear Cake

2 C. shredded, peeled apples
2 C. shredded, peeled pears
2 C. sugar
1 1/4 C. vegetable oil
1 C. raisins
1 C. chopped pecans
2 eggs, beaten
1 tsp. vanilla extract
3 C. flour
2 tsp. baking soda
2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. salt
Cream cheese frosting:
1 pkg. (3 oz) cream cheese, softened
1/4 C. butter, softened
3 C. powdered sugar
2 T. milk
1/2 tsp. vanilla extract Recipe
In a large bowl, combine the first eight ingredients.
Combine dry ingredients; stir into the fruit mixture.
Pour into a greased 13 x 9 inch baking pan.
Bake at 325º for 1 hour or till a toothpick inserted near the center comes out clean.
Cool on a wire rack.
For frosting, beat cream cheese and butter in a mixing bowl until fluffy.
Add sugar and milk and vanilla. Mix well.
Spread over cooled cake.
Store in refrigerator.
