Berry Snack Cake

1 cup fresh or frozen blueberries
1 cup whole-wheat pastry, or 1 cup plus 1 tablespoon all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon salt
2/3 cup sugar
1/4 cup light tub margarine
3 eggs
1 1/2 teaspoons vanilla extract
Recipe
Heat oven to 350 degrees. Coat a 9-inch round cake pan with nonstick baking spray (or grease and flour pan). If using fresh berries, rinse in colander and let drain.
In small mixing bowl, stir together 1 cup flour, baking powder and salt; set aside.
In medium mixing bowl, combine sugar and margarine. Beat with an electric mixer at medium speed until creamed or well-mixed. (When using an electric mixer, use a rubber spatula to scrape down the sides frequently.) Add eggs, one at a time, beating well after each addition. Stir in vanilla.
At low speed, beat in flour mixture in 2 batches until blended and smooth, but don't overbeat (you can also just stir flour in). Spread batter evenly in prepared pan - use a rubber spatula to get all the batter out.
Place blueberries in zip-top plastic bag with 1 tablespoon flour and toss until coated. Sprinkle blueberries on top of cake.
Bake cake until toothpick inserted in center comes out clean, about 20 to 25 minutes. Remove cake from oven and place on wire rack to cool 5 minutes.
Eat warm or let cool.
